Sydney Seafood School, the brand spanking new school at the equally brand spanking new Sydney Fish Market, will host a Sundowners session especially for women on International Women’s Day.  

An oyster immersion class, Mother Shuckers kicks off at 6pm on Wednesday, March 11. It sounds like a huge amount of fun, not just because you’ll be tasting and shucking oysters, but because you’ll be toasting the occasion with a glass of Bollinger Champagne. 

As you might have read in an earlier post, the Sydney Fish Market opened with much fanfare in January on a site overlooking Blackwattle Bay, not far from where the old Fish Market was located. Although the Seafood School at the old site was much loved, this new one is state-of-the-art, with Neff induction cooktops and Gaggenau appliances, natural light and sweeping views of Sydney Harbour.

The school’s footprint has expanded, with a dedicated event space, Ngara, and a feature oyster bar. The program has expanded as well, with a wide variety of class themes designed around the best Australian seafood, paired with a NSW-focused wine program. 

For International Women’s Day, however, it will be Bollinger, and a Bollinger expert will be on hand to talk about the wine. Appellation Oysters’ Davin Charlesworth will lead a deep-dive into all things oysters, talking about the different varieties and how the environment in which they grow (the “merroir”) influences their taste. 

You’ll be able to taste oysters from two different estuaries, learn how to test for freshness, and learn how to safely shuck oysters at home.
