Chablis Week: A Celebration of Oysters and Terroir

From September 29 to October 13, 2025, Chablis Wines is partnering with Sydney hospitality group Merivale to present Chablis Week: a celebration of France’s most prestigious white wine region across 16 of Sydney’s top dining venues.  

From Mimi’s in Coogee to Mr. Wong in the CBD and The Surf Deck at Collaroy, participating venues are offering Chablis and oyster pairings ($90 – $110), featuring wines from the Petit Chablis, Chablis, and Chablis Premier Cru appellations.

Called Chablis Week but in fact running for a fortnight, it’s a chance to explore the full character and complexity that make these wines unique. The wine producers involved include Famille Grossot, William Fevre, Domaine Antoine et Laura Robin, Julien Brocard, Domaine du Colombier, and Prieure Saint-Côme.

Guests can choose between six or 12 complimentary oysters, paired with specially selected bottles of Chablis, showcasing the minerality, purity, and precision that Chablis is known for. See below for details of what the individual venues are offering.

Chablis and oysters: a classic pairing

Located in the northernmost part of Burgundy, Chablis is renowned for producing still wines exclusively from Chardonnay grapes. Shaped by the unique Kimmeridgian subsoils and cool climate, it offers a world of possibilities in every glass.

From Petit Chablis’ lively, zesty freshness, perfect for casual enjoyment, to the elegance of Chablis, known for its finesse and minerality, and the depth and complexity of Chablis Premier Cru and Chablis Grand Cru, each sip offers a new way to explore flavour.

Chablis is an extraordinarily versatile variety and its pairing with oysters is timeless. Many would say it is a match made in heaven. But the venues are also encouraging diners to consider food pairings beyond that of just oysters. Delicate sashimi, fresh vegetables, creamy cheeses, and poultry are among the pairings recommended.

With a distinct mineral profile, vibrant acidity, and a commitment to sustainability, Chablis reflects the purity of its terroir and the expertise of its winemakers. In 2024, Australia became the 10th largest market for Chablis, with over half a million bottles enjoyed across the country.

From coastal views to city laneways, Merivale’s diverse venues will each showcase their own spin on the Chablis and oyster experience.

Bert’s Bar and Brasserie, Newport

Art deco elegance and sparkling sea views provide the backdrop at Bert’s, where you can indulge in six oysters paired with Petit Chablis, William Fevre ($95) or Chablis, Famille Grossot ($110). Alternatively, go all out with a dozen oysters and a premium Chablis Premier Cru, Vau de Vey, Julien Brocard ($190).

Mimi’s, Coogee

Mediterranean sophistication and a serious Chablis selection come together at Mimi’s, where you can savour six or 12 oysters alongside a trio of Chablis, from the vibrant Petit Chablis, William Fevre ($95 with 6 oysters) to Chablis, Famille Grossot ($110 with 6 oysters), to a complex Chablis Premier Cru, Vau de Vey, from Julien Brocard ($190 with 12 oysters).

Sushi e, Sydney CBD

Take a seat at the marble counter and enjoy a front-row view of culinary artistry in motion at this Japanese fine-dining restaurant. Pair six oysters with a crisp Petit Chablis, Domaine Antoine et Laura Robin ($95) or a precise Chablis, William Fevre ($110). For an elevated experience, enjoy 12 oysters matched with the nuanced Chablis Premier Cru, Vaillons, Domaine Antoine et Laura Robin ($190).

Mumu, Sydney CBD

Big flavours and bold vibes define Mumu, where chef Dan Hong’s southeast Asian street food finds new energy with the freshness of Chablis. Perfect for a pre-party pit stop or a casual feast with friends, Mumu offers six oysters paired with a bottle of Petit Chablis, Prieure Saint-Côme ($90) or Chablis, Famille Grossot ($110).

Ash Street Cellar, Sydney CBD

Ash Street Cellar is an intimate Euro-inspired venue, hidden in a CBD laneway, where you can unwind with six oysters and a bottle of Petit Chablis, Domaine du Colombier ($90) or step it up with a refined Chablis, Domaine Antoine et Laura Robin ($110).

The Surf Deck, Collaroy

Perched above Collaroy Beach, The Surf Deck channels summer vibes with sweeping ocean views and a seafood-driven menu. Embrace the warmer weather with six oysters and your choice of Petit Chablis, Domaine du Colombier ($90) or Chablis, Domaine Antoine et Laura Robin ($110).
