Deep-fried Tasmanian oysters at House of Tong, Sydney.

Jumbo Oysters, House of Tong, Sydney

I

When House of Tong lists ‘Jumbo Oysters’ on its menu, it really does mean jumbo. The restaurant, on the second floor of the North Ryde RSL Club in Sydney, Australia, prides itself on its deliciously fresh seafood.

It sources products daily from the Sydney Fish Market and has sizeable fish tanks stocked with some very big critters. We couldn’t believe the size of the deep-fried Tasmanian oysters — so large that a single oyster was enough to fill a side plate.

We normally enjoy our oysters au naturel but these were delicious, the batter light and crunchy, complementing the squishy salty oyster it encased.

House of Tong prides itself on its live seafood, with executive chef Tong Lau hand-selecting the fish and shellfish from premium suppliers every morning. He has four decades of experience in Sydney restaurants, including Sea Treasure and Shanghai Stories 1938 before opening House of Tong.
