Hobart’s Belvedere restaurant showcases Tasmania’s rich bounty of produce, and not surprisingly, oysters are one of the star attractions.

The cosy restaurant in the Vibe Hotel Hobart has a roaring fireplace, making it the perfect spot in winter for enjoying a single malt whisky and freshly shucked oysters. In summer, you might turn to one of the enticing cocktails on the drinks list.

Every Thursday to Saturday, from 4pm to 6pm, the Belvedere is the place to be with Oyster Happy Hour offering $2 Golden Oysters alongside $10 house beers, wines and spirits, and $14 cocktails.

Oysters on offer include Pacific Gold oysters from Tasmania’s Boomer Bay, with a fresh briny flavour and lovely umami balance; oysters from the Tasmanian Oyster Co in Dunalley, with a silky texture and hints of melon, seaweed and green cucumber; and salty, robust Pacific oysters from Bruny Island.

Pair with cocktails

The Belvedere suggests some delicious cocktails to pair with the oysters: Cherry Blossom Sour (Handpicked Threecuts cherry gin, Chambord, lemon juice, sugar and aquafaba) with the Boomer Bay oysters; Between The Islands (Tasmanian apple and oyster infused vodka, triple sec, Juicy Isle apple juice, lemon juice and sugar) with the Dunalley oysters; and Gin Berry Spritz (gin, berry liqueur, sparkling soda) with the Bruny Island oysters.

The Belvedere is on the site of a beloved Art Deco dance hall that shaped Hobart’s social fabric from the late 1930s. Today’s restaurant pays homage to this heritage and celebrates the best of Tasmania.
